Leek and Potato soup is a classic creamy vegetable soup that's busting with flavour, when served hot with crusty bread and butter it will satisfy even the biggest appetite.

Yield: 4 Servings

3 medium-sized potatoes peeled and diced.
2 medium leeks, finely chopped.
1 medium onion.
50g butter.
1 Litre of vegetable stock (two vegetable Stock Cubes).
salt and pepper.
Fresh parsley or chives to garnish,.


1. Finely chop the onion and leeks and cut the potatoes into roughly even sized pieces,

2. Melt the butter and sauté the onion and leeks until translucent.

3. Add the potatoes, I litre of vegetable stock and season with salt and pepper.

4. Cook until the vegetables are tender then mash or puree the mixture for a smoother soup,

5, when your leek and potato soup is ready garnish with parsley or chives and serve with crusty bread and butter.
