A delicious low fat salad that takes minutes to put together. Use Savoy, pointed or green cabbage depending on what’s in season.
200g Savoy cabbage, finely shredded
100g carrots, peeled and cut into thin matchsticks
2 spring onions, finely shredded
2 tbsp fresh orange juice
2 tbsp low fat Greek yoghurt
3 tbsp low fat mayonnaise
1 tbsp finely chopped coriander or flat-leafed parsley
50g dry roasted salted peanuts, roughly chopped
Put the cabbage,carrots, onions, orange juice, yoghurt, mayonnaise and half the chopped herbs together in a large bowl. Mix together thoroughly using your hands or two forks. Season with pepper and just a little salt.
Transfer the mixture to a salad bowl and top with the remaining chopped herbs and peanuts just before serving.
Look for bags of ready shredded carrots in the supermarket chiller cabinet. They’re ideal for this recipe.
Add some chopped dried apricots.
A handful of coarsely grated Gruyere cheese mixed in with the dressing is also great!
If you can’t find the herbs, finely chop a handful of watercress instead.
