Breakfast is the most important meal of the day and taking time to enjoy a healthy breakfast in the morning will give you all the energy you need to face the busy day ahead.

A healthy breakfast can provide some of the vitamins and minerals required for good health and wellbeing.

Manufacturers have made it easier for us to enjoy a health breakfast, the introduction of variety packs of cereal, instant porridge and a range of smoothies means breakfast can be prepared and eaten in no time, recent evidence suggests that eating a health breakfast can also help people control their weight.

More traditional breakfasts like soft boiled eggs and soldiers can be cooked just as quickly and you'll probably enjoy them more than anything from your local supermarket.

What better way to start a morning than with freshly boiled free range eggs and hot buttered toast cut into little soldiers.

The ingredients and cooking instructions for this dish are simple.

2 free-range eggs

2 slices bread

butter

Method

1. Place the eggs in a small pan of cold water and bring to the boil. simmer the eggs for 3 minutes before removing with a slotted spoon.

2. Whilst the eggs are cooking toast the bread, butter generously then slice into little soldiers

3. Cut the tops off the eggs add a little salt and dip your buttery soldiers in the yolk and enjoy the taste of childhood.

Simple as that.

Although eggs do contain cholesterol, they are a good choice as part of a healthy, balanced diet.
